What does cucumber have to offer? LOTS!

    The everyday cucumber has more to offer than you think. It is from the same family as gourds, squashes, melons, zucchini, etc. It is very low in calories, it provides just 15 calories per 100 g. Contains no saturated fats or cholesterol (even though healthy cholesterol is not a bad thing).

    The humble cucumber surprisingly contains quite a bit of vitamin K.  Vitamin-K has been found to help profoundly in bone strength by promoting osteotrophic (bone mass building) activity. It has also been know to play a potential role in treating Alzheimer's patients by limiting neuronal damage to the brain

It also has a considerable amount of potassium, which is an important electrolyte.

Eating the cucumber:
If you choose not to peel the cucumber, make sure you wash it very well (I use white vinegar in a spray bottle). I prefer peeling because then it can get any sprays, waxes, or pesticides that were sprayed onto the plant while growing.

Storing the cucumber:
The cucumber can be stored at room temperature for several days, but is best kept fresh in the refridgerator.
